Chana Masala -Chole

 


Kabuli Chana                                  250 gms 

Onion ,Tomato Medium                    4 each 
Garil Pearls                                        10
Ginger                                               1 inch
Dania, Jeera powder                          1 spoon each
Chilly powder                                    2 teaspoons 
Garam Masala                                    1 teaspoon 
Channa masala powder                      2 tablespoon
salt to taste, 
oil                                                       1 cup
ghee                                                    1 cup
Coriander finely chopped                  1 cup
haldi                                                   1 spoon
kasuri methi                                        1 spoon
Clove                                                  2 nos
Elaichi                                                 3 nos
 Bay leaf                                              1 
 Dalchini                                              1 an inch 
Soak chana the previous day by adding a pinch of soda for 6 to 8 hrs.
Next day wash thoroughly and cook after adding haldi and salt.
Grind onion, giger garlic into a fine smooth paste without adding water .
Next grind tomato into a smooth paste separately. Take a kadhai dry roast clove, dalchini, elaichi, and bay leaf . Add the onion paste, once the water leaves add oil and fry. Now add all the powders and saute for 2 minutes.Add the tomato paste and some salt .Add the ghee. 
Take a portion ( a fist) of cooked chana ,keep it aside. 
Put the rest of the cooked chana into the paste , mix well. Mash the fistful chana and add into the kadhai. Sprinkle coriander leaves . 
Serve hot with the spicy sweet chutney.

P.S you can add the dry masalas while cooking the chana itself.
Tie a spoonful tea in a piece of cloth and dip it while cooking the chana or pour a spoon tea decoction into the chana masala while cooking . 
Sweet Chutney :
A lemon size tamarind  soaked in a glass of  hot water 
Dates seedless 4 numbers.
Chilly powder 2 teaspoon
Jaggery            3 teaspoon

Take the dates and soak in hot water.
Take out the pulp from the tamarind .

Grind all the ingredients with the dates and the tamarind pulp .
Boil them till they become a smooth chutney .

 Boil as mentioned , grind onion and put tomatoes in hot water  for 10 minutes, take out and get the pulp by squashing it.

Take a kadhai, first pour oil , add the onion paste, once it leaves sides and the water leaves, add the tomato pulp and let both get mixed up.
Now add the boiled chana (  collect the water and boil it)with water and add 1 teaspoon chilly powder, jeera powder, dania powder and 1 teaspoon ginger garlic paste, 1/2 spoon aamchur powder , mix well. leave for 3 minutes, add 1 1/2 teaspoon Chole masala mix and pour the collected boiled hot water and after 3 minutes remove and serve.
